Why does Outlook Express still ask me for my password when I open it after
connecting? .. The box for save password is greyed out and cannot be changed

I am assuming you refer to password for your mail account, not your
identity:

Most likely solutions, based on posts from others who have had the problem:

OLEXP: Your Outlook Express Password Is Not Retained in Windows 2000 or XP:
http://support.microsoft.com/?kbid=264672

Save password setting not retained in Outlook:
http://support.microsoft.com/default.aspx?scid=kb;en-us;290684
(disregard that the KB article references MS Outlook, not OE)

Less likely is:

Save Password Check Box Is Unavailable:
http://support.microsoft.com/?kbid=137361
