How do I get my TV to recognize I'm plugged in to it through an S-Video
Cable? I've never done something like this before!

You need to go into the setup section of the tv, and set the S=video channel
active.

There is no S-Video option in my TV's menu screen...what should I do?

OOOOH, just noticed you want to use it as a monitor.
I was thinking you were trying to play something from tv out on your
computer.
Not sure you can use a tv as a monitor with just S video out. Might be
possible with a digital tv and the right software, but i doubt you can just
hook it up.
