How do I limit the number of documents that appear to the newest 5 or 10
opened?

You'll need to edit the registry:
Go to Start -> Run and enter regedit in the Open box.
Click OK.
Navigate to this location
HKEY_CURRENT_USER\Software\Microsoft\Windows\CurrentVersion\Policies\Explorer
Right click an open area of the right hand pane and select New ->
DWORD value.
Name it MaxRecentDocs.
Right click on this new value and select Modify from the drop
down menu.
Make sure that Decimal is selected in the Base section.
Enter 5 or 10 as the Value data.
You should now see that number in parenthesis in the Data column.

Keep in mind that you'll have to logoff and log back on for the
change to take effect.
