Desktop VS Server

I am with a very small company running 8 computers off of an xp pro network
(wired). We are using an old desktop pc as our "network server". Our IT
needs are very small (word docs, email, web, printing, ect..) I plan on
purchasing a new "server" as our old one sounds like a Harley Davidson.

What is the effective difference between a desktop PC and an actual "server"
in terms of usage? I have never worked off an actual server, but I'm
assuming that you manage it's settings and files from another computer on the
network.

Also, should I purchase an actual "server" or just purchase a new PC for use
as a "server".
