Hi
To delete scanner driver prior to installing a updated driver:
Goto system, device manager, imaging devices and delete the scanner entry there. Is this correct?

yes ,if thats where you found it (sometimes can be in other sections) then
reboot and install new drivers

you do not have to delete a drive before you do an update for the driver
